Oatmeal Apple Heath Cookies

Oatmeal cookies with apple chunks, chocolate chips, and health bits for a twist on fall.

Original Recipe via Cooking Classy

Yields1 Serving
 ½ cup Butter
 ¾ cup Brown Sugar
 1 Egg
 1 tsp Vanilla
 ¼ tsp Salt
 ½ tsp Baking Soda
 1 ¼ cups Flour
 1 ¼ cups Old Fashioned Oats
 1 cup Honey Crisp Apple, peeled & diced
 ¼ cup Heath Bits
 ½ cup Mini Chocolate Chips
 1 tsp Lemon Juice

Preheat oven to 350 degrees.

Cream butter and sugar until creamy. Beat in vanilla and egg.

Add baking soda, salt, and half of the flour. Mix until just combined, then add remainder of flour. Do the same for the oats, mixing halfway.

Peel, core, and dice apples. Toss in lemon juice. Mix into dough with rubber spatula. Add health and chocolate chips, mixing with rubber spatula until evenly combined.

Drop into 1 tablespoon dough balls on baking sheet. Bake for 12 minutes, or until cookie is set and bottoms are golden brown. Let sit for one minute on sheet, then transfer to wire rack to cool completely.
